Coconut Almond Slice
1/2 packet of 'nice' or scotch finger plain sweet biscuits, 1 & 1/2 cup of organic desiccated coconut, 1/2 cup of almonds (for making almond meal) 1/2 cup organic coconut oil melted, 1/2 cup dried organic figs, 1 can of condensed milk, 1/4 cup raw almonds, 1/2 cup coconut flakes, 1/4 cup white chocolate buttons
Preheat your oven to 180. Grease a slice tin and line with baking paper.
Using a food processor, blend the biscuits and almonds until they fine crumbs. Add the desiccated coconut, figs and coconut oil. Process until well combined.
Press well into your tin using wet hands. Be aware that too much oil will cause the slice to fall apart once it is cooked.
Sprinkle your 1/4 cup raw almonds over the top of the slice along with the chocolate and coconut flakes. Now empty the condensed milk over the top, making sure it is equally disbursed over the slice.
Put your slice in the oven for 20-25 minutes. It is best when you let the sides of the slice go golden brown.
Take out of the oven and let it cool completely. (leave for 30 minutes. Now you can slice, move to a Tupperware container and into the fridge. It will last for 4 days. Enjoy! x
