Healthy Date COOKIES - for Toddlers and Health Conscious Humans
A quick recipe to throw together if you have guests arriving any minute, or you're like me and want a healthy afternoon snack for your child and yourself.. that is not chips!
You can use an egg or half a very ripe banana in this recipe. You only need one of them as this will bind the mixture together.
Ingredients: 1 cup roughly chopped Dates, 1/3 cup organic Oats, 1/2 cup dessicated Coconut, 1 Tbs Chia seeds, 1 tbs LSA mix (Linseed, Sunflower, Almond mix), 4 tablespoons Quinoa Flour (use any sort of plain flour if you do not have quinoa), 1 tsp vanilla extract, 1 tsp Baking Powder, 1 tbs Coconut Oil, 1/2 ripe Banana OR 1 Egg, 1/4 cup Almond Milk (or any milk of your choice)
Set your oven to 180 degrees. Line a baking tray with non stick paper.
Pop everything - EXCEPT the milk - in the food processor and blend for 15 seconds. Now stir in the milk until the mix resembles a batter.
Now, spoon the mixture onto the tray. I used a heaped teaspoon.
Place into your pre heated oven for 15 minutes. (or until golden brown) *****If your oven has a tendency to over cook things, check them after 10 minutes.
