Healthy Chocolate Mousse - sugar free baby

I have heard and read about avocado being used to in all sorts of cooking, including smoothies and mousse. I thought I would take the jump and try it out as I had some plump ripe avocados in the fruit bowl.

I made this recipe up as I went along which meant I taste tested a LOT. I do believe that this recipe will put a smile on the face of even the 'sugar free cynic' ..

Makes 4

You need:

  • 1/4 cup medjool dates (soaked)
  • 2 tbs chia seeds
  • 2 avocados
  • 3 medium sized ripe bananas (not too ripe)
  • 1/4 cup organic raw cacao
  • 1/4 cup dessicated coconut
  • 2 tbs coconut oil
  • fresh blueberries/raspberries/berries in general (optional)

Start by pouring some boiling water over your dates so they are just covered. Add your chia seeds to this. Set aside for 20 minutes. Have a cup of tea. Or wine. I would choose wine.

Now, using a food processor, blend all ingredients until a thick paste forms.

Find some bowls/wine glasses and divide the mousse into four. Cover and place in the fridge for at least 30 minutes. This is a great recipe for making ahead of time. Serve with fresh fruit and/or a little sprinkle of coconut/cacao.

If kept refrigerated, the mousse will last well for 3 days.
