Overnight Oats topped with my homemade sugar free granola - low GI goodness
I thought I would add this to the blog because it has not only saved me a bit of time in the mornings, I have also really noticed that I am not at all bloated after breakfast. Soaking the oats help with digestion and give your gut a break from breaking down the fibres. The texture of the porridge is far better too.
This meal is low GI. It fills you up and tastes amazing (if you are a fan of oats) :)
Keep in mind you will need to do this the night before.
You will need:
- A container with a lid
- 2 cups steel cut organic oats
- 1 cup water
- 2 tbs flaxseeds
- 1 tsp salt
- 2 tbs hemp seeds (optional)
All you need to do is add all the ingredients to the container. Stir a couple of times. Place the lid on and put into the fridge overnight.
When serving, take the desired amount from the container and place into bowls. Add a dash of milk (I use full cream cows milk) and put into the microwave* for 1min20secs. Then top with a little more milk, home made granola **(recipe is on the blog)**, fresh fruit or yoghurt. The list is endless.
*I use the microwave because it is quick and easy for me. If you prefer, you can cook the oats on the stove top. Keep in mind though, it will not take long at all to cook and warm through.
It makes me happy to know that we are all getting a wholesome, natural and delicious breakfast. At a relatively low cost too.
