GLUTEN FREE Roast Almond Cookies
These are a wonderful afternoon snack for the entire family. Packed full of good fats and no sugar they will keep you fuller for longer. I threw some chia seeds in too for added protein.
Best eaten on the day you make them. But will will last in a airtight container for 3 days.
- 1 large RIPE banana - mashed
- 1 tbs flaxseeds
- 1 tbs chia seeds
- 1/2 cup currants (you can use sultanas or chopped apricots)
- 1/2 almond meal
- 1/2 quick organic oats
- 1/4 cup roasted whole almonds
- 1/4 cup sugar free peanut butter (made with 100% peanuts - look at the ingredients or make your own)
Preheat your oven to 170 degrees (mine is fan forced so adjust yours accordingly)
Place all ingredients into the bowl and mix well with a fork until all is combined.
Using a tablespoon, spoon the mixture on to a tray lined with baking paper. Use your hands roll small balls if you like neat biscuits :) Flatten with the back of the spoon.
Bake for 12-15 minutes. Until golden.
REALLY IMPORTANT - let them cool completely before eating. They will be crumbly otherwise.
