Pork and Quinoa broth with boiled eggs and kale

I wanted to try something new with free range pork mince .. and I really wanted to use as much as I could from the vegetable garden for my dish.. 

It was a chilly night last night so I definitely thought soup and I really didn't want noodles for some reason so I went with quinoa. ANYWAY.. this is what happened .. and if I can say this about a dish I made up as I went along.. IT WAS AMAZING. It was fresh, warming, filling, flavoursome, soulfoody and just damn right delicious.

I encourage you to give it a go. It's easy.  SO great for a week night meal. 20 minutes all up :)


  • Serves 4


  • 500 grams free range quality pork mince
  • 2 tbs coconut oil
  •  2 tbs tamari (less salt than soy sauce)
  • 2 tbs fresh grated ginger
  • 2 garlic cloves grated


  • 2 tbs coconut oil
  • handful cashew nuts
  • 2 cups fresh kale - stalks removed
  • 1/2 cup fresh mint roughly chopped
  • 1/2 cup fresh coriander roughly chopped
  • 1 cup roughly chopped swiss brown mushrooms
  • 1 cup sugar snap peas - cleaned and roughly chopped


  • 2 cups warm vegetable stock (great if you can prep it in a jug)


  • 2 cups cooked Quinoa
  • 8 boiled eggs (that is two per person so go with less if you don't want that many)
  • 1/2 cup fresh mint roughly chopped
  • 1/2 cup fresh coriander roughly chopped
  • Sesame seeds to garnish
  • Salt and Pepper


Start by doing getting everything out and laying it on the bench. Prep everything. This will take longer than the cooking time.

Heat a wok/pan to medium heat and add everything from the 'Pork list' - literally throw it all in. It should start to sizzle straught away. Mix everything up with a spatula or even potato masher. Making sure there are no clumps in the mince. This won't take long to cook. Maybe 8 minutes. Once cooked, pour into a bowl and place a lid/plate or whatever to keep it warm.

Using the same wok/pan heat the coconut oil on the medium heat. Once melted, add the cashews and leave them to cook for a couple of minutes. Now add the rest of the "Vege list" to the wok. Coat the vegetables well with the oil and cashews and place a lid on. Turn the heat to low, place a lid on top and cook for 10 minutes. Or until the kale is wilted and the mushrooms are cooked.

To serve up, place the quinoa in the bowl, then the pork, then the vegetables and finally pour the stock over the dish. Sprinkle the herbs on top. Cut the boiled eggs in half and place on top of the herbs. Sprinkle sesame seeds over the top of the eggs and season with salt and pepper.
