Best Raw Snickers Bar Yet

For those of you that know me, you will know I love peanuts. Raw peanuts, roasted, peanut butter via spoon, with vege's, on bread, crackers, with banana, in bliss balls, .... I love love it.

So I am forever trying peanut recipes to see if I can better the last. Well ... this one has bettered the last + some..

To make you feel better ( .. it makes me feel a lot better .. ) Peanuts are actually very good for you. They are high in monounsaturated fats (good fats). An awesome source of energy. They are high in Vitamin E, Niacin, Minerals and Folate. Along with loads of other good stuff.

What makes peanut butter bad is all the added salts and SUGARS. Luckily, there are some great peanut butters available now that have NO ADDED anything. Just 100% peanuts. Now this may mean that it may not taste as wonderful to begin with. Going from a sweet butter to a not so sweet butter may take a few weeks to get used to.. but I promise, you will get used to it and you will be more satisfied with less of the natural stuff.

Ingredients:

Base

  • 2 cups pitted dates (medjool or dried)
  • 1 cup cashews
  • 1/2 cup almonds
  • 1/2 cup raw peanuts
  • 2 tbs peanut butter
  • 1 tsp vanilla extract

Middle

  • 1/2 cup raw peanuts

Topping

  • 1/4 cup peanut butter
  • 1 tbs honey
  • 1/2 cup coconut oil
  • 3 tbs raw cacao

1. Preheat oven to 180 C and roast 1/2 cup peanuts on a tray for 8 minutes. Set aside and allow to cool.

2. Line a 9 inch square tin with baking paper.

3. Blend all base ingredients until a dough forms. Press firmly (wet fingers if needed) into the square tray.

4. Sprinkle the cooled roasted peanuts over the base and place in freezer.

5. Using a fork, whisk all "Topping" ingredients together until a paste forms.

6. Remove tray from freezer and drizzle the topping over slice evenly.

7. Place back in the freezer for at least 2 hours before serving.

*** Slice into desired sized pieces and keep in freezer in an air tight container.
