These were thought up after I had seen something similar on television. I was determined to not use the sugar and other processed ingredients, so played around and got a lovely result. Toddler very happy too... they are super yummy :)

Really, what is not to love about coconut and raspberry? Better still you will be able to keep these in the freezer for a few months. So good to have when you can't be bothered to make anything and you have visitors or just feel like a sweet treat without the guilt.

This is the sort of thing I will make for my boys birthday parties too. No nut, no eggs.... need to think of all these things now with so many children having allergies.

They would work with blueberries or strawberries..

They look so pretty too..

Coconut and Raspberry Kisses

Makes 12-16

Ingredients

  • 3 cups shredded coconut
  • 1 cup organic coconut cream
  • 1 TBS powdered stevia (optional - depending on your sweet tooth)
  • 1 tsp vanilla bean paste
  • 1/2 cup coconut oil
  • 1 cup frozen raspberries

Method

1. Line a muffin tray with paper cases.

2. Place shredded coconut in food processor and blend for 1-2 minutes. Add coconut cream, oil and vanilla and blend for 1-2 minutes or until a paste forms.

3. Spoon half the mixture evenly into the muffin cases. Press down firmly. Place in the freezer for 20 minutes.

4. Add the raspberries to the remainder of the coconut mix and blend until smooth.

5. Spoon the raspberry mix evenly into the muffin cases and press firmly with fingers or the back of a spoon.

6. Cover tray loosely with cling wrap and place in freezer for at least 2 hours before serving.

7. Remove from the paper casings and store in an airtight container in the freezer for up to 3 months.
