The Best Raspberry Chia Coconut Ice Pops

Take me back to Summer!! This time of the year in Perth, I forget just how hot it can get in Summer. As I sit here in my puffer jacket and uggs, I dream of the boys and I in bathers, sitting on the trampoline with these pink fruity ice pops. Most likely the sprinkler is on and most of Gabes ice pop is on his face and in his hair. But that's the best isn't it. Just enjoying the warmth of the sun and listening to fits of laughter as your children enjoy the simplest things in life. 

So while I am dreaming of that, I will drink my hot coffee, eat my warm creamy porridge and take delight in the fact that all times of the year have their positives.

This is wonderfully refreshing icey pole that everyone will love. For its creaminess, easiness and deliciousness!!

Prep time 10 minutes

Ingredients:

  • 1 frozen banana

  • 1 cup frozen raspberries

  • 1 kiwi fruit, peeled

  • 1 tbs chia seeds

  • 1 cup coconut cream (400ml can)

  • 1 tsp stevia (optional)

Method:

1. Pour coconut cream and chia seeds into food processor. Stir and leave for 5 minutes. 

2. Add the remaining ingredients and blend until combined.

(At this point you can eat your ice cream right away!!) OR

3. Place 3 or 4 frozen raspberries in the bottom of each of the ice pop moulds. Pour the icecream over the top. Place in freezer.
