I quit sugar four years ago when I was pregnant with my first son. It was making me fat, sick, lethargic... miserable. It was hard, but I got there. The reward has been incredible. For me and my family.

A bit of salad inspiration for you this Tuesday xx

It doesn't take a lot to make a simple salad with fresh ingredients..

For this zucchini and radish salad you need:

  • 2 med fresh firm zucchini, peeled length ways avoiding the seeds in the middle
  • 5 firm fresh radish, sliced thinly
  • 1/4 cup pomegranate arils
  • fennel sprigs
  • handful toasted walnuts
  • handful toasted pinenuts

Dressing

  • Extra virgin olive oil and fresh lemon juice, equal parts

Super easy and quick to put together. Amazing flavours. And great served with fish, chicken, steak..
